Living With Food Allergies and Sensitivities

I have been pretty fortunate not to have any food allergies, but I am from a family with a long string of food allergies or sensitivities.  

My sister has celiac disease (CD), an autoimmune disorder that can only be controlled by maintaining a gluten-free diet. Gluten, a protein found in wheat, rye and barley, damages the small intestine and interferes with the absorption of nutrients in a person who has CD.

While gluten is found in certain foods, it can also be hidden in everyday products such as medicines, vitamins, and lip balms.

My other sister is also sensitive to gluten along with dairy, corn and soy. Our family gatherings strive to accommodate a variety of special dietary needs without depriving any one of great tasting food. Yes, it can be done. It just takes a little planning and some help from reliable resources.

One resource I use is www.LivingWithout.com. This website offers up-to-date information on living with food allergies and sensitivities. While at that site, sign up for their free special recipe-of-the-week email and receive new gluten-free, dairy-free recipes weekly.
